Last weeks Box was so great. I'm doing it again. I had the pork shoulder with some friends on sunday, amazeballs! If you want to make friends invite them around for slow cooked pork shoulder.
Try cooking the Pork in milk. Milk contains calcium, which, according to Shirley Comer at “Fine Cooking,” may have an effect on an enzyme in the meat itself that breaks down the proteins. This process is similar to the way that aging tenderises meat. Milk also contains lactic acid, which helps to break down the proteins and soften the collagen. All that is very good I have found that cooking pork in milk (and a bunch of sage) really enhances the pork flavour.
This weeks roast is pork shoulder. It is pre-marinated in salt, fennel and sechuan pepper. The simple roast is to put the oven on for 1.5 hours at 180C. Then cover in foil and add a litre of milk or stock and a bunch of sage. Cook for an additional 3.5 hours at 150C. You will be able to cut this with a spoon.
To make a delicious pulled pork add some hot sauce, apple cider vinegar and some brown sugar in equal parts to taste.
