Sweet Potato & Black Bean Chili
Ingredients: 2 medium sweet potatoes, peeled and diced 1 can black beans, drained and rinsed 1 can diced tomatoes (400g) 1 onion, chopped 2 cloves garlic, minced 1 red bell pepper, chopped 1 tbsp olive oil 1 tsp ground cumin 1 tsp chilli powder 1/2 tsp paprika Salt and pepper to taste 3 cups vegetable broth (or water) Fresh cilantro (optional, for garnish)
Instructions: Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté for 3-4 minutes until softened. Add the sweet potatoes, bell pepper, cumin, chilli powder, and paprika. Stir well to coat the vegetables with the spices. Pour in the vegetable broth, diced tomatoes, and black beans. Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes or until the sweet potatoes are tender. Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro if desired.
